Brahms, Miles Davis, Django Reinhardt, Stephane Grapelli, Van Morrison, Louis Armstrong, Julian Bream, Jethro Tull (the acoustic, contemplative stuff). I'm sure there's a lot more but these are the ones that immediately come to mind.
GeneCafe, Mazzer Mini, Ibrik, Press pot, Gaggia Classic.

Arling and Cameron are the ultimate coffee duo! (http://www.last.fm/music/Arling%2B%2526%2BCameron) Always loved them, especially on the weekend, for that first cup of Saturday morning coffee...mmm....Saturday morning coffee, quite possibly the greatest coffee time ever...

Deathcab For Cutie is a little too hard for coffee time I think, but thats just imo. I usually prefer more mellow sounds for relaxing with some coffee. Although, if you're talking about chugging down afternoon-morning coffee (i.e. coffee that's cold from the morning in the afternoon) whilst blasting fools online, then sure, bring on the harder stuff. But then I'm more of a Mastodon and/or TOOL fan.
