Yes, you can. You can also alter the flavor profile through adjustment of the fan/temps/power to lengthen the time to and in crack stages.

My bean storage issue is fixed now. I just bought a nice vacuum sealer at Costco on sale! Yeah!

I've seen the sealers at Costco. Are you freezing green or roasted beans?

Green beans only. I may or may not do that. I am still toying with options for longer storage so that I can buy larger amounts of beans if desired.

I had 21 pounds initially but have 15 now. At my current rate of coffee consumption, that is about 4 months of coffee. I probably won't keep more than 6 months worth at a time, but it will be nice to know the best storage options if I want to buy more of a particular bean type in the future.

The sealer sale ends tomorrow, so I decided to go for it. Too many temptations at Costco, though. Bad, bad! :lol:

You may have already posted, but how do the beans turn out after freezing? It certainly is tempting to stock up on favorites since, sadly, some of them do disappear.

IME, they're fine after one year. I've seen reliable reports of several years with little or no degradation, but I only started vac/freezing greens in April of last year, myself. :-/

I vacseal them using a cheap sealer and the make-your-own-bag roll stock. After trying a couple other arrangements, I prefer a flat, thin package. After being sealed, they go in the freezer, usually a few at a time both so they'll cool rapidly and because the vacsealing itself gets boring after a while. :-/

I think I had an earlier trial using the handy-seeming ziploc vac bags, but didn't have very good luck with them, as they slowly lost vacuum. Probably never got to the point of tossing those into the freezer.

Thanks for posting everyone, I may try freezing some beans in the method you described. It's hard to imagine that the quality doesn't diminish, but when you start out with great beans you probably still come out ahead!
